What each ingredient does

Button mushrooms
Provide the main body and savoury flavour of the sauce as they soften in the liquid.
Flour
Thickens the sauce when mixed with butter and stirred into the hot mushroom liquid.
Butter
Adds richness and fat, carrying flavour and giving the sauce a smooth mouthfeel.
Lemon juice
Adds acidity that brightens the earthy mushroom flavour and balances the richness.

The step that matters

Stirring the flour paste into the mushroom mixture. Flour needs heat and stirring to swell evenly; added in lumps or without enough mixing, it stays grainy. Mixing it with butter first to a paste helps it disperse before it thickens.

Swap the lemon

How well each one fits the dish's main ingredients (mushroom, butter, pepper, flour):

  1. Lemonthe original
  2. Plumfits about as well
  3. Limefits less well
  4. Cherryfits less well

Fit is the average pairing score against mushroom, butter, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
