Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Provide the bulk and body, softening into a thick sauce as they cook down.
Onions
Add sweetness and aroma as they soften and cook down during the long boil.
Peppers
Add fresh, mildly peppery flavor and more bulk to the sauce.
Vinegar
Adds acidity that sharpens the flavor and helps keep the sauce tangy.

The step that matters

Boil for 1 hour, stirring occasionally. A thick mixture of tomatoes and onions can scorch on the bottom of the pot while the liquid reduces. Regular stirring keeps the sauce from sticking and burning, and spreads heat so it thickens evenly.

Swap the tomato

How well each one fits the dish's main ingredients (onion, pepper, clove, mustard, vinegar):
