Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Preheat the oven to 350°F (175°C).

  2. Cream the butter and sugar together until light and fluffy.

  3. Add the egg whites and sweet milk, mixing well.

  4. Sift together the flour and baking powder, then gradually add to the mixture.

  5. Divide the batter into 3 deep layer cake pans and bake until golden.

Prepare the fruit and icing

  1. For the fruit, prepare the coconut and chop the raisins, citron, almonds, dates, figs, and currants.

  2. To make the icing, beat the egg whites and gradually add 2 cups of sugar until smooth.

Assemble

  1. Spread the icing between the layers and on top of the cake.

What each ingredient does

Butter
Creams with the sugar to trap air, giving the cake a light, tender crumb and rich flavor.
Egg whites
Add structure and moisture, helping the batter set as it bakes.
Flour
Forms the main structure of the cake as its proteins set during baking.
Baking powder
Releases gas in the batter, helping the layers rise and turn light.
Sugar
Sweetens the cake and helps create a fine, tender texture when creamed with butter.
