Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Clarify the syrup by coagulating and trapping impurities, which are then skimmed off as foam.
Ginger
Provides the main aroma and flavor of the nectar.
Loaf sugar
Sweetens the drink and forms the bulk of the syrup.
Lemons
Add acidity and brightness that balance the sweetness.
Yeast
Ferments the cooled syrup, producing gentle carbonation and flavor development.

The step that matters

Skimming the foam after boiling. Egg whites rise with impurities as the mixture heats; if foam is not removed, it can cloud the nectar and leave off flavors. Skim thoroughly as the boil begins.

Swap the ginger

How well each one fits the dish's main ingredients (sugar, egg, lemon):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Dillfits about as well
  4. Gingerthe original

Fit is the average pairing score against sugar, egg, lemon. Candidates are from the same food group and used in at least 100 recipes.
