Orange Marmalade

Ingredients

Directions

Prepare the peel

  1. Pare off the yellow peel of the oranges and cut it into thin shreds, then into 1‑inch pieces.

  2. Boil the shreds for 1 hour to remove the bitter taste, then drain and discard the water.

Make the marmalade

  1. Cut the oranges, saving all juice and pulp, but discard the seeds and white skins.

  2. In a preserving kettle, combine the pulp, juice, shreds, and sugar, and stir until it boils.

  3. Let it boil for 30 minutes, skim off any foam, then pour into jars.

  4. Once cooled, cover with paper and store.

What each ingredient does

Sugar
Sweetens and, with the fruit pectin and acid, helps the marmalade thicken and set as it boils.
Bitter oranges
Provide the peel, pulp and juice that give marmalade its flavour, aroma and natural pectin.

The step that matters

Boiling the peel before cooking. Boiling the shreds for a full hour softens the peel and draws out its bitter compounds. Skipping or shortening this step leaves the finished marmalade unpleasantly bitter.
