Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Giblets
Release rich meaty flavour into the broth as they brown and simmer for hours.
Butter
Fat that softens the vegetables and carries aroma into the soup.
Flour
Browns with the giblets and adds body to the broth.
Browned flour
Thickens the soup and adds a toasted, nutty flavour.
Turnip, carrot and onion
Sweetness and aromatic base that flavour the broth as they soften.

The step that matters

Browning the giblets and flour. Browning creates Maillard flavour compounds that give the broth depth. Pale, under-browned giblets make the soup taste flat and boiled.

Flavor stand-ins for the turnip

How well each one fits the dish's main ingredients (carrot, onion, butter, flour, chicken, pepper, egg):

  1. Leekbetter flavor fit
  2. Potatobetter flavor fit
  3. Capsicumbetter flavor fit
  4. Turnipthe original

Fit is the average pairing score against carrot, onion, butter, flour, chicken, pepper, egg. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
