Cream Oysters on the Half Shell

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F in the steps is the modern equivalent, not the book's own figure.

Make the cream

  1. Combine hot water, milk, thick cream, and salt in a saucepan.

  2. Place the saucepan in a kettle of hot water and heat until just boiling.

  3. Stir in butter.

  4. Mix flour or starch with a little cold milk. Stir the flour mixture into the saucepan.

  5. Stir and beat the prepared cream well.

Assemble and bake

  1. Place a large oyster in each buttered shell.

  2. Arrange the oysters in a baking pan, propping them up with pebbles or bits of shell.

  3. Fill each shell with the prepared cream.

  4. Bake in a hot oven (400°F / 200°C) for 5 to 6 minutes until brown.

  5. Serve in the shell.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Thick cream
Adds richness and body, giving the filling a creamy texture.
Rice flour, corn starch, or arrowroot
Thickens the cream so it sets around the oysters rather than running off.
Butter
Adds fat and flavor to the cream and coats the shells.
Oysters
Provide the main seafood flavor and tender body under the cream.

The step that matters

Stirring the thickened cream. Starch must be fully dispersed and heated to thicken; stirring it smooth and brought to a boil keeps lumps out and gives the cream a uniform set in the oven.
