What each ingredient does

Flour
Forms a roux with the butter that thickens the milk into a binding sauce.
Egg yolks
Enrich the sauce and help bind the filling so it holds its shape.
Milk
Forms the liquid base of the sauce that holds the chicken and mushrooms together.
Cooked chicken
Provides the main protein and bulk of the filling.
Mushrooms
Add moisture and savory flavor to the filling.

The step that matters

Let the mixture cool fully before breading. A thick, cooled filling firms up enough to be shaped and coated without falling apart. If it is still warm or soft, the breading will slip off and the croquettes may burst or leak during frying.

Swap the onion

How well each one fits the dish's main ingredients (butter, flour, milk, pepper, chicken, mushroom, egg):

  1. Capsicumfits better
  2. Potatofits better
  3. Asparagusfits better
  4. Onionthe original

Fit is the average pairing score against butter, flour, milk, pepper, chicken, mushroom, egg. Candidates are from the same food group and used in at least 100 recipes.
