Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped whites trap air and add foam, giving the drink a light, frothy body.
Tartaric acid
Adds sharp acidity that gives the drink its tart flavour.
Sugar
Provides sweetness and body to the syrup.
Soda
Reacts with the acid to release carbon dioxide, adding fizz when served.

The step that matters

Adding the soda at serving. Soda fizzes when it meets the acidic syrup, so it should be added just before drinking. Waiting lets the carbonation escape and the drink go flat.
