What each ingredient does

Currants
Provide natural pectin and acid, which help the juice set into a gel.
Sugar
Adds sweetness, helps the jelly set, and helps preserve it.

The step that matters

Boiling the juice with the sugar. Sugar, acid and pectin only form a firm gel when the mixture is boiled long enough to concentrate. Boiling too briefly leaves the jelly runny, while overcooking can make it stiff or cause sugar to crystallise.
