Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Emulsify the oil and vinegar into a thick, creamy dressing that holds the salad together.
Sweet oil
Provides fat and richness, and with the egg yolks forms the body of the dressing.
Mixed mustard
Helps stabilise the emulsion and adds a sharp, savoury bite.
Lettuce
Adds crisp texture and fresh contrast to the rich chicken and dressing.

The step that matters

Gradually stir in the sweet oil. Adding the oil slowly while stirring lets the egg yolk emulsify it into a smooth dressing. Pouring it in too fast can cause the mixture to split and look greasy.

Swap the lettuce

How well each one fits the dish's main ingredients (chicken, egg, mustard, pepper, vinegar):

  1. Capsicumfits better
  2. Horseradishfits about as well
  3. Lettucethe original
  4. Shallotfits about as well

Fit is the average pairing score against chicken, egg, mustard, pepper, vinegar. Candidates are from the same food group and used in at least 100 recipes.
