Apple Meringue

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the syrup and meringue

  1. Boil the water down to 1 ½ cups to create a rich syrup.

  2. Beat the egg whites to stiff peaks.

  3. Slowly add the syrup to the egg whites while stirring continuously.

  4. If the mixture is not stiff, add a little sifted white sugar.

Assemble and bake

  1. Place the preserved apples in a serving dish, leaving space for the meringue.

  2. Spread the meringue smoothly over the apples and sprinkle with fine white sugar.

  3. Bake in a moderate oven at 350°F (175°C) for about 45 minutes until light yellow.

  4. Let cool before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped to stiff peaks, they form the airy foam that gives the meringue its structure.
White sugar
Sweetens the meringue and, dissolved in the syrup, helps stabilise the whipped foam.
Preserved apples
Provide the fruit base and moisture under the meringue topping.

The step that matters

Slowly add the syrup to the egg whites while stirring continuously. Adding hot syrup too fast can deflate the whipped foam or cook the egg whites unevenly. A slow, steady pour while stirring keeps the meringue smooth and stable.

Swap the apple

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
  4. Applethe original

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
