Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal shin
Gives the broth its meaty body and savoury depth as it simmers for hours.
Tomatoes
Provide the main flavour, acidity and colour of the soup.
Ground rice or arrowroot
Thickens the soup so it has a smoother, heavier body.
Sugar
Balances the acidity of the tomatoes with sweetness.
Onions
Add aromatic sweetness and savoury background flavour to the broth.

The step that matters

Stirring in the ground rice or arrowroot. Starch thickens only when it is evenly dispersed and heated. Added in lumps or without stirring, it clumps and leaves the soup uneven, so stir well while mixing it into the hot soup.

Swap the onion

How well each one fits the dish's main ingredients (veal, pepper, carrot, turnip, tomato, rice, sugar):

  1. Capsicumfits better
  2. Parsnipfits better
  3. Okrafits better
