Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal shin or soup stock
Provides the savoury liquid base and body for the soup.
Onions
Add sweetness and aromatic depth as they soften during long simmering.
Carrots
Add natural sweetness and body to the soup.
Turnips
Add mild sweetness and soften into the broth, thickening it slightly.
Tomatoes
Provide acidity, colour and the main tomato flavour of the soup.

The step that matters

Pour the soup over the toast just before serving. Bread soaks up liquid and turns soft quickly, so the diced toast loses its crispness if the soup sits on it for long.

Swap the tomato

How well each one fits the dish's main ingredients (veal, onion, carrot, turnip, pepper):

  1. Leekfits better
  2. Parsnipfits better
  3. Okrafits better
  4. Tomatothe original

Fit is the average pairing score against veal, onion, carrot, turnip, pepper. Candidates are from the same food group and used in at least 100 recipes.
