What each ingredient does

Brisket or rattleran
Lean and fatty meat that becomes tender and juicy after long curing and slow cooking.
Coarse sea salt
Draws out moisture and seasons the meat while helping to preserve it.
Saltpetre
Helps the cured meat keep its pink colour during the curing period.
Vinegar
Adds acidity that sharpens flavour and helps preserve the meat.
Whole spices
Contribute aromatic flavour that penetrates the meat during curing.

The step that matters

Keeping the beef fully covered during the week-long stand. Meat exposed above the brine can spoil or cure unevenly. Keeping every piece submerged in acidic liquid keeps the cure consistent and the surface safe.
