Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the main meat, which becomes tender with slow, gentle cooking.
Butter
Adds richness and fat, and helps the top brown in the oven.
Flour
Thickens the gravy so it coats the meat.
Egg
Binds the force-meat balls so they hold their shape.
White wine
Adds acidity and aroma to the gravy.

The step that matters

Stew gently and turn the meat. Low, steady heat over a long time breaks down connective tissue so the veal becomes tender. Boiling hard can toughen the meat and dry its outer layers, so turning it helps it cook evenly.

Swap the mace

How well each one fits the dish's main ingredients (veal, pepper, butter, flour, egg, white wine, carrot):

  1. Parsleyfits better
  2. Marjoramfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against veal, pepper, butter, flour, egg, white wine, carrot. Candidates are from the same food group and used in at least 100 recipes.
