A Veal Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the veal

  1. Parboil the veal pieces in water until about half cooked, then remove and let cool.

  2. Season the cooking water with pepper, coarse sea salt, mace, and salt pork.

Assemble and bake

  1. Dredge in a little flour to thicken the gravy.

  2. Line the sides of the pie dish with pastry, then add the veal and gravy.

  3. Cover with a thick layer of pastry and cut a small hole in the top.

  4. Bake at 400°F (200°C) for half an hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the pie as the meat that becomes tender during cooking.
Flour
Thickens the cooking liquid into a gravy around the meat.
Pastry
Encloses the filling, forming the crust that holds the pie together while baking.
Salt pork
Adds savoury fat and flavour to the cooking liquid.

The step that matters

Parboil the veal until about half cooked. Partial cooking lets the meat finish baking inside the pie without drying out or overcooking, while the gravy still gets its flavour from the cooking water.

Swap the mace

How well each one fits the dish's main ingredients (veal, pepper, pork, flour):

  1. Sagefits better
  2. Marjoramfits better
  3. Turmericfits better
  4. Macethe original

Fit is the average pairing score against veal, pepper, pork, flour. Candidates are from the same food group and used in at least 100 recipes.
