What each ingredient does

Chicken
Forms the main protein; simmering until tender breaks down its connective tissue for a soft texture.
Salt pork
Adds fat and savory flavor that enriches the broth and gravy.
Curry powder
Supplies the spice aroma and color that define the gravy.
Rice
Provides a starchy base that soaks up the spiced gravy.

The step that matters

Simmer until tender. Simmering gently rather than boiling hard keeps the chicken moist and tender, while stopping early leaves connective tissue tough and chewy.

Swap the onion

How well each one fits the dish's main ingredients (chicken, pork, rice):

  1. Potatofits better
  2. Tomatofits better
  3. Capsicumfits about as well
  4. Onionthe original

Fit is the average pairing score against chicken, pork, rice. Candidates are from the same food group and used in at least 100 recipes.
