Why it works: Carrot and celery match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 10,173 recipes. Both carry myristicin, which smells spice, warm. The science ↓
Jellt for Meats
Ingredients
Directions
Make the stock
Boil the calf's feet, onions, cloves, peppercorns, salt, carrots, and celery in 6 quarts of water for 6 hours.
Strain the mixture into an earthen pot to cool.
Remove the fat from the cooled mixture and transfer the rest to a preserve kettle.
Clarify and set
Add the cut lemons, egg whites, and shells, and boil for 15-20 minutes.
Remove from heat and keep hot; add 1 cup of cold water and let it stand for 15 minutes.
Strain through a jelly bag until clear, then pour into molds.
Let the remaining jelly cool in a dish for garnishing meat.
If the jelly is not a bright color, add 1 tablespoon of soy sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Calf's feet
- Provide collagen that dissolves into gelatin as the stock simmers and cools.
- Egg whites and shells
- Bind impurities during boiling so they can be strained out, leaving a clear jelly.
- Lemons
- Add acidity that brightens the flavour and helps the clarified jelly stay clean-tasting.
The step that matters
Strain through a jelly bag until clear. Egg whites must coagulate and trap cloudy particles during the brief boil and rest. Straining too early or squeezing the bag pushes fine solids through, leaving the jelly cloudy instead of clear.
Swap the onion
How well each one fits the dish's main ingredients (clove, carrot, celery, lemon, egg, sauce):
- Parsnipfits better
- Leekfits better
- Turnipfits better
- Onionthe original
Fit is the average pairing score against clove, carrot, celery, lemon, egg, sauce. Candidates are from the same food group and used in at least 100 recipes.
