What each ingredient does

Rice
Cooked until tender, it forms the body of the croquettes and holds their shape.
Eggs
Bind the rice mixture when stirred in, and form a coating that helps the crumbs stick.
Milk
Cooks with the rice to give a soft, creamy texture and a richer flavour.
Butter
Adds fat for richness and a tender texture in the rice mixture.
White sugar
Adds sweetness and balances the lemon's acidity.
Lemon
Juice and peel add acidity and bright aroma to the rice mixture.

The step that matters

Shape the rice mixture while it is hot, then coat it. Cooked rice firms as it cools and becomes harder to shape, so rolls formed while warm hold together better. Coating with beaten egg and crumbs before frying creates a barrier that helps the rolls keep their shape and brown evenly.

Swap the lemon

How well each one fits the dish's main ingredients (rice, milk, egg, butter, sugar):

  4. Lemonthe original

Fit is the average pairing score against rice, milk, egg, butter, sugar. Candidates are from the same food group and used in at least 100 recipes.
