Paste Puffs

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Roll out the rich pastry dough and cut it with a biscuit cutter.

  2. Place the cut pieces on a baking sheet.

  3. Cut out smaller pieces of puff pastry the same size and cut a hole in the center of each.

  4. Place the puff pastry over the dough, creating a rim.

  5. Bake in a preheated oven at 400°F (200°C) until golden brown.

  6. Just before serving, fill the puffs with preserves.

  7. If desired, brush the tops with beaten egg and sprinkle with sugar before baking.
