Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the main meat, which becomes tender through long, slow simmering.
Butter
Fat for frying the onions, adding richness and flavor to the base.
Flour
Browns and thickens the base and the gravy.
Onions
Add sweetness and aroma as they soften and brown in butter.
Carrots
Add sweetness and body to the broth and the braising vegetables.
Pickled cucumbers
Add acidity that cuts through the rich meat and gravy.

The step that matters

Cooling the beef overnight before slicing. Letting the cooked beef rest and cool firms the meat so it can be cut cleanly and keeps its moisture rather than falling apart.

Swap the clove

How well each one fits the dish's main ingredients (beef, onion, carrot, pepper, butter, flour, turnip):

  1. Parsleyfits better
  2. Celeryfits better
  3. Thymefits better
