Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Provide the main body, acidity and flavour of the soup.
Arrowroot
Thickens the soup into a smooth, glossy body without clouding it.
Ground rice or flour
Adds starch that thickens the soup and gives it body.
Sugar
Balances the acidity of the tomatoes with sweetness.

The step that matters

Stir in arrowroot and ground rice or flour before boiling. Starch must be dispersed in cold liquid first to avoid lumps; once heated, it swells and thickens the soup. Adding it to hot liquid directly causes clumping.</br>

  4. Onionthe original

Fit is the average pairing score against carrot, tomato, pepper, clove, arrowroot, rice, sugar. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
