Almond Loaf Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. Cream together the sugar and butter until light and fluffy.

  3. Beat the eggs separately and then add them to the creamed mixture.

  4. Stir in the brandy, grated nutmeg, and cream.

  5. In a separate bowl, mix the baking soda, cream of tartar, and flour.

  6. Gradually add the dry ingredients to the wet mixture.

  7. Fold in the chopped citron, sliced almonds, and raisins.

Bake and serve

  1. Pour the batter into greased loaf pans.

  2. Bake for 45-60 minutes or until a toothpick comes out clean.

  3. Frost if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Beaten eggs add structure and moisture, helping the cake set and hold its crumb.
Butter
Creamed with sugar, butter traps air and adds richness and tenderness to the crumb.
All-purpose flour
Flour provides the main structure that sets as the cake bakes.
Baking soda
Baking soda reacts with the acidic cream of tartar to release gas, helping the cake rise.
Sugar
Sugar adds sweetness, helps tenderize the crumb, and aids browning.
Raisins
Raisins add chewy texture and concentrated sweetness throughout the loaf.

The step that matters

Gradually add the dry ingredients to the wet mixture. Adding flour in portions and mixing gently limits gluten development, keeping the loaf tender rather than tough.

Swap the nutmeg

How well each one fits the dish's main ingredients (sugar, butter, egg, brandy, cream, flour, almond):

  1. Nutmegthe original
  2. Cinnamonfits about as well
  3. Capersfits less well
  4. Tarragonfits less well

Fit is the average pairing score against sugar, butter, egg, brandy, cream, flour, almond. Candidates are from the same food group and used in at least 100 recipes.
