Directions

Prepare

  1. Soak the peas overnight in soft water.

  2. The next morning, wash the peas and place them in a soup pot with the carrots, onions, celery, and water.

  3. Bring to a boil and simmer for 4 to 5 hours, adding boiling water as needed.

Strain and finish

  1. Strain the soup through a coarse sieve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Dried peas
Break down during long simmering to thicken the soup and give it body.
Salt pork
Adds savory fat and flavor to the broth as it simmers.
Onions
Build aromatic sweetness and depth as they soften into the broth.
Carrots
Add natural sweetness and color while softening into the soup.

The step that matters

Simmering the finished soup gently with frequent stirring. Peas are starchy and settle on the bottom of the pot, where they scorch easily. Gentle heat and regular stirring keep the soup from sticking and burning, which would give it a bitter, smoky taste.

Swap the peas

How well each one fits the dish's main ingredients (carrot, onion, celery, pork):

  1. Beansfits better
  2. Sesamefits better
  3. Lentilsfits better
  4. Peasthe original

Fit is the average pairing score against carrot, onion, celery, pork. Candidates are from the same food group and used in at least 100 recipes.
