A Veal Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the veal

  1. Parboil the veal pieces in enough water to fill your pie dish until about half cooked.

  2. Remove the veal and let it cool.

  3. Season the cooking water with pepper, coarse sea salt, mace, and diced salt pork.

  4. Dredge in a little flour to thicken the gravy.

Assemble and bake

  1. Line the sides of your pie dish with pie crust.

  2. Add the veal and gravy to the dish, then cover with a thick layer of pie crust.

  3. Cut a small hole in the top crust.

  4. Bake at 400°F (200°C) for half an hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rack of veal
Forms the meat filling, becoming tender through parboiling and baking.
Flour
Thickens the cooking liquid into a gravy that binds the filling.
Salt pork
Adds fat and savory flavor to the seasoned cooking liquid.
Pie crust
Forms the lining and top that enclose the filling as it bakes.

The step that matters

Dredge the veal in flour before assembling. Flour must be lightly coated and mixed into the liquid so it thickens the gravy evenly. Clumps or too much flour leave pasty spots, while too little leaves the gravy thin and runny in the baked pie.

Swap the mace

How well each one fits the dish's main ingredients (veal, pepper, pork, flour):

  1. Sagefits better
  2. Marjoramfits better
  3. Turmericfits better
  4. Macethe original

Fit is the average pairing score against veal, pepper, pork, flour. Candidates are from the same food group and used in at least 100 recipes.
