Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Brisket of beef
Provides the main meat, which becomes tender through long, slow simmering.
Red wine
Adds acidity and depth of flavour to the cooking liquid and gravy.
Flour
Thickens the cooking liquid into a gravy as it heats.
Soy sauce
Adds savoury depth and saltiness to the gravy.
Mixed mustard
Adds sharpness and a touch of heat to the gravy.

The step that matters

Skimming the scum after the boil. Foam that rises as the water heats contains impurities that can cloud the broth and taint its flavour, so removing it keeps the liquid clear and clean-tasting.
