Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef brisket
Forms the main body of the dish and becomes tender through long, moist boiling.
Bread crumbs
Absorb moisture and bind the stuffing so it holds together inside the meat.
Egg
Binds the dressing ingredients together as it sets during cooking.
Mustard
Adds sharp flavor that balances the richness of the beef.
Onion
Adds savory aroma and moisture to the stuffing.

The step that matters

Stuffing between the fat and lean and sewing it tightly. If the pocket is not sealed tightly, the dressing can leak or loosen during the long boil, leaving the stuffing unevenly held and the slices harder to keep intact.

Swap the mustard

How well each one fits the dish's main ingredients (beef, bread, pepper, onion, egg, flour):

  1. Chivefits better
  2. Leekfits better
  3. Capsicumfits better
  4. Mustardthe original

Fit is the average pairing score against beef, bread, pepper, onion, egg, flour. Candidates are from the same food group and used in at least 100 recipes.
