Directions

Prepare the beans

  1. Dry the coffee beans in the oven with the door open for 1-2 hours before roasting.

  3. Let it sit for 5 minutes.

  4. Insert the filter into the pot.

  6. Keep hot without boiling.

  7. After it runs through, add water to make a quart of coffee.

Boil and serve

  1. Combine 1 cup ground coffee, 1 quart water, and stir in the egg or fish skin.

  2. Boil for 10 minutes.

  3. Pour a cupful out and back into the pot.

  4. Let it sit for 10 minutes before serving in another pot.

  5. Serve with boiled cream or milk.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Coffee beans
Provide the main flavour, which develops and deepens as they roast until light brown.
Ground coffee
Supplies the flavour and aroma compounds that are extracted into the water.
Butter
Adds fat that carries aroma and gives the roasted beans a richer, smoother taste.
Egg
Its proteins bind the fine grounds as they cook, helping the coffee clear as it settles.

The step that matters

Stir in the egg, then boil for 10 minutes. The egg must be mixed in before boiling so its proteins can bind the fine grounds. If the coffee is stirred again or boiled too hard, the grounds stay suspended and the brew turns cloudy.

Swap the beans

How well each one fits the dish's main ingredients (coffee, walnut, butter, egg, cream):

  1. Almondfits better
  2. Pecansfits better
  3. Hazelnutfits better
  4. Beansthe original

Fit is the average pairing score against coffee, walnut, butter, egg, cream. Candidates are from the same food group and used in at least 100 recipes.
