Vol-au-vent

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the case

  1. Roll out the puff pastry to ½ inch thick and cut into a shape that fits your dish.

  2. Roll the leftover pastry to ½ inch thick and cut two strips, each 1 inch wide.

  3. Brush the dish with cold water.

  4. Place one strip around the edge.

  5. Brush the strip with water again.

  6. Place the second strip on top.

  7. Fill the center with pieces of stale bread.

  8. Roll out a cover.

  9. Cut the cover to match the inner rim.

  10. Brush the cover with egg white.

Bake and fill

  1. Bake in a preheated oven at 400°F (200°C) for about 30 minutes, turning if necessary for even baking.

  2. Once baked, remove the cover with a knife and take out the bread.

  3. Fill with your choice of filling.

  4. Replace the cover and serve.

Finish

  1. Brush the top with egg and sugar.

  2. Sprinkle with pounded almonds.

  3. Fill with preserved fruit.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rich puff pastry
Forms the crisp, flaky walls that rise and separate into layers in the oven.
Stale bread
Fills the center to hold the cover's shape while baking, then is removed.
Egg white
Brushed on the cover, it adds a glossy sheen and helps the top brown.
Sugar
Adds sweetness and helps the glazed top caramelise and brown.

The step that matters

Gluing the strips with water. Brushing water between the pastry pieces helps the strips stick, so they do not separate and lift as the pastry rises. Cold pastry in a hot oven puffs most evenly.

Swap the almond

The recipe marks almond as optional. How well each one fits the dish's main ingredients (bread, egg, sugar):

  1. Pecansfits about as well
  2. Chestnutfits about as well
  3. Peasfits about as well
  4. Almondthe original

Fit is the average pairing score against bread, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
