Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the croquette, giving it a meaty texture and flavor.
Bread crumbs
Absorb moisture and give the mixture body, and form a crisp outer coating when fried.
Raw egg
Binds the mixture together so the pieces hold their shape while frying.

The step that matters

Fry in hot fat until golden brown. The fat must be hot enough to crisp and brown the coated outside quickly. If it is too cool, the crumbs absorb oil and the croquettes turn greasy and can fall apart before the centre is cooked.

Swap the mace

How well each one fits the dish's main ingredients (veal, bread, pepper, egg, parsley):

  1. Marjoramfits better
  2. Sagefits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against veal, bread, pepper, egg, parsley. Candidates are from the same food group and used in at least 100 recipes.
