Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chestnuts
Provide the bulk and starchy body that thickens the sauce when mashed.
White stock
Liquid that softens the chestnuts and carries their flavour into the sauce.
Cream
Adds richness and a smooth, velvety texture to the finished sauce.
Lemon juice
Adds acidity that brightens the flavour and balances the richness of the cream.

The step that matters

Simmer gently, stirring constantly, until ready to serve. Once cream is added, high heat can make it separate or scorch on the bottom of the pan. Gentle heat and constant stirring keep the sauce smooth and evenly warm.
