Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton
Provides meaty flavor and gelatin-rich body to the broth as it simmers.
Onion
Adds sweet, savory aromatic depth to the broth.
Carrots
Contribute natural sweetness and mild earthy flavor to the broth.
Celery
Adds aromatic, savory background flavor to the broth.

The step that matters

Skimming the foam. Foam contains coagulated proteins and impurities that can make the broth cloudy and give it an off flavor. Removing it as it rises keeps the broth clear and clean-tasting.
