A Veal Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Parboil the veal pieces in enough water to fill your pie dish until about half cooked.

  2. Remove the veal to cool.

  3. Season the gravy with pepper, coarse sea salt, mace, and diced salt pork.

  4. Dredge in a little flour to thicken the gravy.

Assemble and bake

  1. Line the sides of your pie dish with pie crust.

  2. Layer the meat and gravy into the dish.

  3. Cover with a thick layer of pie crust.

  4. Cut a small hole in the top crust for steam to escape.

  5. Bake at 400°F (200°C) for half an hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rack of veal
Provides the main meat, which becomes tender and flavorful as it cooks in the pie.
Salt pork
Adds fat and savory flavor to the gravy as it renders into the filling.
Flour
Thickens the gravy so it holds together rather than running out of the pie.
Pie crust
Forms the lining and top cover that enclose the filling and bake to a crisp, golden shell.

The step that matters

Cut a small hole in the top crust. Steam builds up inside the sealed pie as the filling heats. Without a vent, pressure can lift or split the crust and the gravy can boil over.

Swap the mace

How well each one fits the dish's main ingredients (veal, pepper, pork, flour):

  1. Sagefits better
  2. Marjoramfits better
  3. Turmericfits better
  4. Macethe original

Fit is the average pairing score against veal, pepper, pork, flour. Candidates are from the same food group and used in at least 100 recipes.
