What each ingredient does

Pigeons
Provide the main meat, which becomes tender through slow, gentle stewing.
Salt pork
Renders fat into the pot, adding savory flavor for frying the onion and the stew.
Flour
Dusted over the pigeons, it helps thicken the gravy as the liquid stews.
Crackers
Soaked crackers soften and thicken the gravy as they stew over the pigeons.

The step that matters

Stewing gently with enough liquid. Gentle simmering keeps the meat tender rather than tough. If the liquid reduces too far, the pigeons can dry out and scorch, so adding more water or stock keeps them moist throughout the cooking.

Swap the onion

How well each one fits the dish's main ingredients (pork, pepper, flour):

  1. Capsicumfits better
  2. Potatofits better
