Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Stew the quails in veal stock for about 10 minutes.

  2. Remove the quails and thicken the gravy with a little flour and a small piece of butter.

  3. Add a little pepper and coarse sea salt to the gravy.

Assemble and bake

  1. Fill the dish with the gravy and cover it with pastry.

  2. Bake for 30 minutes at 400°F (200°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Quails
Provide the meat that forms the main filling of the pie.
Veal stock
Cooks the quails and forms the liquid base of the gravy.
Flour
Thickens the gravy so it holds together rather than running out of the pie.
Butter
Adds richness and a smooth, glossy finish to the gravy.
Pastry for covering
Encloses the filling and browns in the oven as the pie's crust.

The step that matters

Thicken the gravy before filling the dish. Flour must be cooked into the liquid to thicken it fully; a thin gravy will run out of the pie and leave the pastry soggy underneath.
