Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the pineapple

  1. Peel the pineapple and remove all specks.

  2. Grate the pineapple.

  3. Weigh the grated pineapple and use the same weight in sugar and half that weight in butter.

Mix the filling

  1. Cream the sugar and butter together.

  2. Stir the creamed mixture into the grated pineapple.

  3. Add the eggs and cream, mixing well.

Bake

  1. Bake in a preheated oven at 350°F (175°C) with or without a crust.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pineapple
Provides the main flavour and moisture, and its acidity brightens the sweet custard.
Sugar
Sweetens the pudding and helps it brown slightly as it bakes.
Butter
Adds richness and fat, giving the pudding a tender texture.
Eggs
Set during baking to bind the mixture into a soft, sliceable pudding.
Cream
Adds fat and moisture, making the set custard smoother and richer.

The step that matters

Removing all specks from the pineapple. Any dark specks left in the peel will show in the finished pudding and add a bitter, woody taste. Cutting them out fully keeps the fruit flavour clean and the texture even.

Swap the pineapple

How well each one fits the dish's main ingredients (sugar, butter, egg, cream):
