Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Coagulate as they heat, thickening the custard into a soft set.
Cream
Adds fat and richness, giving the custard a smooth, creamy texture.
Sugar
Sweetens the custard and softens its flavor against the bitter coffee.
Fresh ground coffee
Provides the main coffee flavor and aroma infused into the liquid.

The step that matters

Adding the hot coffee and cream to the eggs. Pouring hot liquid into eggs too quickly, without constant stirring, can scramble the eggs. Adding it gradually while stirring tempers the eggs so they thicken smoothly.
