Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the broth as it heats, giving it a fuller body.
Beef bones (in the method)
Release gelatin and flavor into the water during long gentle simmering.
Carrots
Add sweetness and body to the broth as they soften.
Onions
Add savory depth and aroma to the broth as they cook down.

The step that matters

Boil gently for 3-4 hours. A gentle simmer extracts flavor and gelatin from the bones without cloudiness. A hard rolling boil can emulsify fat into the broth and make it greasy and murky.

Swap the tomato

The recipe marks tomato as optional. How well each one fits the dish's main ingredients (carrot, turnip, onion, clove, pepper, flour):

  1. Parsnipfits better
  2. Leekfits better
  3. Okrafits better
  4. Tomatothe original

Fit is the average pairing score against carrot, turnip, onion, clove, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
