What each ingredient does

Flour
Thickens the soup broth when stirred in with liquid near the end of cooking.
Beef stock
Provides the main savoury, meaty flavour base for the soup.
Soy sauce
Adds salty, savoury depth to the finished soup.

The step that matters

Stirring the flour mixture into the soup. Flour mixed with water should be stirred in smoothly and given time to simmer, so it thickens evenly instead of clumping. Adding it 30 minutes before serving gives it time to cook through and lose its raw floury taste.

Swap the onion

How well each one fits the dish's main ingredients (celery, cabbage, carrot, turnip, beef, flour, pepper):

  1. Parsnipfits better
  2. Leekfits better
