Why it works: Pepper and marjoram match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and 2,609 recipes mention both. Both carry estragole, which smells anise, licorice. The science ↓

A Fillet of Veal Roasted

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Remove the bone from the veal and fill the cavity with a mixture of bread crumbs, pepper, salt, marjoram, butter, and egg, then mix the filling well.

  2. Skewer the veal tightly to keep the dressing inside.

Roast

  1. Lard the veal with pork for added flavor, or baste it often with butter if not larded.

  2. Roast the veal in a 400°F (200°C) oven for four hours.

What each ingredient does

Veal
Forms the main body of the roast and provides the meat that is cooked and served.
Bread crumbs
Absorb the butter and egg to form a moist filling that stays inside the cavity.
Egg
Binds the bread crumb filling so it holds together while roasting.
Butter
Adds fat and moisture to the filling and, when basting, helps keep the surface from drying.
Fat pork
Larding adds fat that bastes the meat from within and adds flavor.

The step that matters

Skewering the veal tightly. Loose skewering lets the filling expand and escape during roasting. Tight closure holds the stuffing in the cavity and keeps the roast compact so it cooks evenly.

Flavor stand-ins for the marjoram

How well each one fits the dish's main ingredients (veal, bread, pepper, egg, butter):

  2. Nutmegbetter flavor fit
  3. Sagebetter flavor fit
  4. Marjoramthe original

Fit is the average pairing score against veal, bread, pepper, egg, butter. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
