A Veal Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the meat

  1. Cut the rack of veal into small pieces.

  2. Parboil the veal in enough water to fill your pie dish until half cooked.

  3. Remove the veal to cool.

Make the gravy

  1. Season the gravy with pepper, coarse sea salt, mace, and diced salt pork.

  2. Dredge in a little flour.

Assemble and bake

  1. Line the sides of your pie dish with pie crust.

  2. Add the meat and gravy to the dish.

  3. Cover with a thick layer of pie crust and cut a small hole in the top.

  4. Bake at 400°F (200°C) for 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rack of veal
Forms the meat filling, providing the main substance and savory flavor of the pie.
Salt pork
Adds fat and savory flavor to the gravy as it renders during baking.
Flour
Thickens the gravy so it binds and holds together rather than running out.
Pie crust
Forms the enclosing shell and top layer that holds the filling while it bakes.

The step that matters

Parboil the veal until half cooked. Parboiling only partly cooks the meat, so it finishes tender in the oven without drying out. Cooking it fully here would leave it tough and dry after baking.

Flavor stand-ins for the mace

How well each one fits the dish's main ingredients (veal, pepper, pork, flour):

  1. Sagebetter flavor fit
  2. Marjorambetter flavor fit
  3. Turmericbetter flavor fit
  4. Macethe original

Fit is the average pairing score against veal, pepper, pork, flour. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
