What each ingredient does

Cranberries
Provide the tart fruit base and pectin that thickens the sauce as it cooks.
Sugar
Adds sweetness that balances the cranberries' tartness and helps the sauce set.

The step that matters

Strain them through a sieve. Straining removes skins and seeds so the sauce is smooth and can hold its shape in the mold.
