What each ingredient does

Isinglass
Gelatin-like protein that sets the liquid into a firm jelly as it cools.
Syrup from preserves
Provides the sweetness and the main flavor and color of the jelly.
Egg whites
Bind to cloudy particles as they heat, helping clarify the liquid when strained.
Brandy
Adds aroma and flavor while helping keep the jelly from tasting flat.
Lemon juice
Adds acidity that brightens the flavor and balances the sweetness.

The step that matters

Let it stand without boiling. Boiling again after adding the cold water would stir up cloudy particles and cloud the jelly. Standing lets the egg whites and shells settle and trap impurities, so the strained jelly comes out clear.

Swap the lemon

How well each one fits the dish's main ingredients (syrup, brandy, egg, sugar, cream):

  2. Raisinfits better
  3. Apricotfits better
  4. Lemonthe original

Fit is the average pairing score against syrup, brandy, egg, sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
