What each ingredient does

Russia isinglass
Gelatin-like setting agent that firms the custard so it holds its shape when unmolded.
Egg yolks
Enrich the custard and add richness, color and body to the cream mixture.
Egg whites
Whipped to soft peaks, they add airy lightness and volume to the mousse.
Heavy cream
Whipped to add fat, creaminess and a light, smooth texture.
Fine sugar
Sweetens the mixture and helps stabilize the beaten yolks.

The step that matters

Folding the whipped cream and egg whites into the yolk mixture. Whites and cream hold air only while whole. Overmixing or stirring vigorously deflates them, leaving a dense, heavy filling instead of a light mousse.
