Directions
The book says “a very hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Set the egg yolks in their shells in a cool place until ready to use.
Spread pounded chicken livers on the rounds of toast.
Beat the egg whites to a stiff froth and heap them on the toast.
Make a hollow in the center and carefully drop in the yolks.
Bake in a hot oven at 400°F (200°C) for three minutes or until lightly browned.
Sprinkle chopped parsley over each and serve.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
