Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the soft, starchy body that holds the croquette together.
Egg yolks
Add richness and help bind the mixture so it holds its shape.
Butter
Adds fat for richness and a smoother, softer texture in the mash.

The step that matters

Fry in hot oil until golden brown. If the oil is not hot enough, the coating absorbs oil and turns greasy instead of crisp, while the centre may stay cool. Hot oil quickly sets and browns the breadcrumb crust, sealing in the filling.
