Poach and serve

  1. Place a skimmer in the saucepan and gently drop the egg onto it.

  2. When the egg white is cooked, carefully remove the skimmer with the egg.

  3. Serve the poached egg on slices of buttered toast or on hashed meat.

What each ingredient does

Eggs
Egg white sets around the yolk in hot water, forming the poached shape.
Buttered toast
Provides a crisp, fatty base that soaks up the runny yolk.

The step that matters

Breaking each egg separately. Breaking each egg into its own cup or dish lets you lower it gently and keeps the yolk intact. Eggs added to the pan from a single bowl can break and spread together, and a broken yolk loses its neat shape.
