Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the custard and whites, folded in, lighten the texture.
Milk
Forms the liquid base that the tapioca softens and thickens in.
Tapioca
Starch that swells and softens in hot milk, giving the pudding its body.
Sugar
Sweetens the pudding and helps stabilise the beaten yolks.

The step that matters

Cook the tapioca until perfectly soft. Tapioca must fully hydrate and gelatinise in the hot milk; if it stays firm, the pudding will have a gritty, chewy texture that cooking longer afterward will not fully fix.
