What each ingredient does

Currant juice
Provides the main liquid and the tart fruit flavour that sets into the jelly.
Sugar
Sweetens the jelly and, with the fruit's pectin, helps it set firm when boiled.

The step that matters

Pour the hot sugar into the boiling juice. Adding the sugar hot keeps the boil from stopping, so the mixture returns to a boil quickly and dissolves fully. Cold sugar would cool the juice and slow setting.
